I made these for breakfast over the weekend, and they were so yummy. My little guy really loved them, I mean that literally, as he was eating he said "I love you pancakes!" We had a lot left over so my little one was able to have them for snacks the next day too. These are for little one's who are ready for finger food.
Here's what you need:
1 cup multigrain pancake mix
1 organic banana chopped or mashed
1 to 2 handfuls organic blueberries
1/2 fresh mango finely diced
1/2 cup low fat or skim milk
1 tbsp oil
2 tbsp flaxmeal mixed with 6 tbsp water (mix and let sit for 2 mintues)
Mix everything together in a large bowl. Add 1 to 2 tsp oil to a large skillet and heat over medium heat. Ladle the batter into the skillet and cook. Flip pancakes when you start to see air bubbles. Add more olive oil to skillet before you ladle next batter of pancakes into it. Let cool, serve and enjoy!

Scramble with Turkey, Kale, Mini Heirloom Tomatoes and Cheddar Cheese
My little one loves eggs, I mean LOVES eggs. He will pretty much eat eggs with anything, which is great for me, because I can scramble then with lots of veggies. We had this for breakfast Friday morning, and my little one couldn't get enough! I enjoyed it too! This is for little ones 9+ months who are ready for finger food.
Here's what you need for 2 to 4 servings:
4 organic free range eggs
1/2 cup finely chopped kale
1/2 cup halved mini heirloom tomatoes
Handful shredded sharp cheddar cheese
2 to 3 slices reduced sodium turkey breast shredded
1 to 2 cloves garlic minced
1/4 tsp ground nutmeg
Break eggs into a bowl and beat them. Add the rest of the ingredients to the bowl and mix together. Spray a large skillet with olive oil and heat over medium high heat. Pour egg mixture into skillet and scramble. Let cool and enjoy!

Kale, Mushroom and Cheese Multigrain Pancakes for the Whole Family
I love a savory breakfast, so I thought I would come up with a savory pancake. This is a yummy, savory, healthy breakfast the whole family can enjoy. These pancakes are full of essential nutrients for you and your little ones. Kale is a super food that is jam packed with essential nutrients. It's full of calcium, vitamin A, C, folate, fiber and iron. Mushrooms are a good source of vitamin D, folate, choline, and fiber. These pancakes are also a great source of whole grains. These are for little one's 10+ months who are eating finger foods, and for mommies and daddies of all ages.
Here's what you need:
3/4 cup multigrain pancake mix
Handful kale finely chopped
1/2 cup finely chopped (almost minced) cremini mushrooms
1tblsp grated parmesan cheese
1/4 cup shredded cheddar cheese
1 egg
1/2 cup milk
1 tblsp olive oil
olive oil cooking spray
Mix all ingredients together in a medium mixing bowl. Spray a large skillet with cooking spray and heat over medium high heat. Ladle pancake batter into skillet. Flip when you start to see air bubbles. Repeat with rest of batter. Serve and enjoy! Serving size for your little one is 1 pancake. You can refrigerate these for up to 4 days, and freeze for 2 months.

Pumpkin Pear Buckwheat Muffins
I am definitely not a baker, but this is what happens when I watch a few episodes of cupcake wars! I had pumpkin puree and some pear left over and was trying to think of something I could make with both of them. I thought they would taste good together in a muffin, so I came up with this recipe. Again, I am not a baker so this recipe could've been a big miss. Luckily the muffins were really yummy and surprisingly moist and light. My husband and son loved them. I might have to start experimenting a little more with baked goods!
Here's what you need:
1 cup buckwheat flour
1 cup multigrain pancake or baking mix (I used Trader Joe's)
2 eggs beaten
1 cup canned 100% pure pumpkin
1 pear peeled and finely diced
1 tblsp pumpkin pie spice
2 tblsp pumpkin butter
1/4 cup canola oil
3/4 cup milk
Preheat oven to 400F. Mix ingredients together until it forms a smooth batter. Spray cupcake tray with cooking spray. Pour batter into tray. Place in oven and cook for 20 minutes. Let cool, serve and enjoy!

Breakfast Burrito for the Whole Family
Here's a recipe that will spice up your family's breakfast! My husband and I ate these eggs wrapped up in a whole wheat tortilla, while our little guy ate it as a finger food scramble. This scramble is filled with protein, calcium, iron, and vitamins A and C. This is for little one's 9+ months.
Here's what you need:
4-6 eggs
1/2 cup quartered organic cherry tomatoes
1 avocado diced
1 cup canned black beans (drained)
Handful shredded mexican cheese
1 tblsp salsa per person (use mild if serving to your little one)
1 whole wheat tortilla per person
2 tsp olive oil
Add 2 tsp olive oil to a large pan over medium high heat. Mix eggs, quartered cherry tomatoes, diced avocado and black beans in a mixing bowl. Pour the egg mixture into the pan, add cheese and scramble. Put 1 tblsp salsa on each tortilla, add scrambled eggs, and wrap into a burrito. You can add a dash of tobasco, or a few red pepper flakes to your wrap if desired. Do not give tobasco to your little one. If serving to your little one just add a little mild salsa to the scrambled eggs and serve right on high chair tray. Enjoy!

Happy Fall!! Here's a yummy pancake recipe for all you pumpkin lovers. Pumpkin is a seriously nutrient rich food for you and your little one. Pumpkins are jam packed with vitamin A beta carotene, potassium, protein, and iron. This is for babies 8+ months and Mommies and Daddies of all ages.
Here's what you need:
1 cup multigrain pancake mix (I use arrowhead mills)
1/2 tblsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1 cup canned organic 100% pumpkin (do NOT get pie filling)
1 egg (If you use arrowhead mills pumpkin mix you don't need egg)

2-3 tblsp plain whole milk yogurt or 1/4 cup milk

Turkey Avocado Cherry Tomato and Pea Scramble
This is a yummy scramble for the whole family. It's jam packed with protein, iron, vitamin A and C. I made this one morning for my little guy, and then the following Saturday my husband asked if I could make that scramble I made for baby J the other day for him too! This is for babies 9+ months and for Mommies and Daddies of all ages.
Here's what you'll need:
4-6 eggs (if you're making it for the whole family) beaten
2 slices low sodium turkey deli meat (pull apart into smaller pieces)
Handful of shredded cheddar cheese
1/2 cup organic cherry tomatoes quartered
1/3 cup cooked organic peas (I used frozen and just steamed in microwave first)
1 organic avocado diced
1 tblsp herbs de Provence
olive oil
Add 2 tblsp olive oil to a large deep skillet and heat over med-high heat. Add eggs to skillet. Then add shredded turkey, avocado, peas, tomatoes and cheese and mix together. Add herbs de Provence and mix until scrambled. Serve and enjoy!

Apple Cinnamon Oatmeal Pancakes for the Whole Family
Here's another yummy pancake breakfast that the whole family can enjoy. These have whole grains, fiber, vitamin A, calcium, potassium, and protein. These are for babies 8+ months, and mommies and daddies of all ages.

Blueberry Banana Multigrain Pancakes for the Whole Family
Growing up my mom made blueberry banana pancakes almost every weekend. I still look forward to eating these pancakes every time I go home. She now makes them for my niece and nephew almost every weekend. The only thing I changed about this recipe is the use of greek yogurt instead of milk. This adds more protein for my little guy. This recipe is for babies 8+ months and Mommies and Daddies of all ages.
Here's what you'll need:
3/4 cup Arrowhead Mills multigrain pancake mix (You don't need to use eggs with this type of pancake mix. If you use a different type of mix you will need 2 eggs.)
2/3 cup quartered blueberries
1 banana chopped
1/4 cup plain Fage greek yogurt
1 tsp ground cinnamon
Heat 2 tblsp olive oil in a large skillet. Mix all ingredients together to make a pancake batter. Ladle the batter into the skillet and cook. Flip the pancakes when you start to see air bubbles on the pancake. Serve with maple syrup for Mommy and Daddy, cut into tiny pieces and serve plain for Baby. Enjoy!

Banana Pear Oatmeal
This is what we had for breakfast this morning. Sometimes there's nothing better than a warm bowl of oatmeal in the morning :)
3 tablespoons organic rolled oats
1 oz pear puree
2 oz mashed banana
Add approximately 1/3 cup filtered water to the oats and cook for 2 minutes (I use quick cooking oats, if you use regular oats it should take 10 minutes). Once oats are cooked add pear puree and banana. Let cool for 1-2 minutes before serving to your little one.
Enjoy!

Mango Blueberry Oatmeal
Here's what Mommy and Baby are having for breakfast this morning:
2 tablespoons organic rolled oats
1 oz mango puree
1 oz blueberry puree
1-2 pinches cinnamon
(Your baby must be at least 6 months to eat homemade oats and mangoes, and atleast 8 months to eat pureed blueberry. If your baby is less than 8 months try mixing mangoes with banana)
If you are making this for you and baby to eat double the recipe.
In a small sauce pan cook oats with 6 to 7 tablespoons of filtered water (I'm sure this is probably equal to a quarter or half cup, but I use the tablespoon because I have it out already from measuring oats). I use quick cooking oats so they are usually done in about 2 minutes. Remove from heat. Add mango and blueberry puree and stir until blended. You can add breastmilk or formula to cool down or thin out the oatmeal. Sprinkle with cinnamon and enjoy!
